Highland Farm Dairy situates itself in Coatesville, Chester County, Pa. and is a farm and dairy owned and operated by Martha and Jerry Pisano. Pioneers in cheese making in Chester County, Martha and Jerry specialize in artisan sheep’s milk cheeses, fresh to aged. The couple purchased Highland Farm Dairy more than a decade ago and slowly bought and bred sheep, learned cheese making and built the facilities required to be a licensed cheese producer. Currently, Highland Farm represents just one of a few licensed sheep cheese makers in Chester County.

High in nutritional value, sheep milk has the unique ability to be consumed by people who are intolerant to cow and goat milk. Sheep generally are bred only in the fall with a lactation cycle of five to six months, which is much shorter than cows and goats. Highland Farm Dairy lambs get the mother’s milk the first 30 days, before milk is used for cheese.

Highland Farm Dairy is a member of the Pennsylvania Farmstead & Artisan Cheese Alliance. The farm’s cheese can be found at any one of the listed retail locations.
